Here is a video I created of a favorite business. And a recipe to use with their fruits in one of my favorite recipes from Paula Dean. I like to use with peaches and put with pork or you can use for a dessert over ice cream.
Ingredients :
* 1/4 cup bourbon
* 2 sticks butter, softened
* 2 cups light brown sugar, packed firmly
* 2 lemons, juiced
* 1/2 cup water
* Assorted fruit cut in 1/2 (peaches or plums)
Directions Put the bourbon into a saucepan over medium-high heat and bring it to a boil. Boil for 1 minute to burn off the alcohol. Add the butter, brown sugar, lemon juice, and water. Bring to a boil whisking until all the sugar is dissolved. Simmer for 5 minutes. Let cool to thicken. Toss fruit with the glaze to coat or brush glaze over fruit with a pastry brush. Place fruit on the grill and turn once when light grill marks appear. Serve with ice cream and drizzle the remaining glaze over the fruit.

Cooking with alcohol is one of my favourites. You might want to give this one a try -
Fresh fruit, almost anything and mixtures are better,
Some frozen raspberry juice or other juice, not citrus
Put it in a clean frying pan and gently raise the temperature until it starts to give off a misty steam, but do not let it boil
Use a very large spoon and lay it on the surface of the liquid
Gently pour in some cognac or brandy into the spoon. As you do this, tip the spoon slightly to one side and move it across the surface until the whole surface of the fruit and juice mixture is lightly covered with the the brandy.
Dim the lights.
Touch a match to the surface and watch the blue flames flicker across the surface.
While it is still burning, ladle the fruit mixture out onto prepared bowls of French vanilla ice cream and watch the alcohol continue to burn on top of the ice cream.
It never fails to impress and taste incredibly good.
